Our carnaroli risotto rice is farmed and imported straight from Italy.
Carnaroli rice grains have the highest content of amylose, a substance that contributes to make the grain compact. For this reason, it boasts special gastronomic characteristics with an excellent balance between absorption capacity and starch loss so that there is no danger of overcooking. This makes it an excellent rice variety for making fine dishes and risottos.
It's a type of Italian rice that is best known for being used in making risotto dishes. In the United States, arborio rice is probably best known for being used in making risottos, but we have found that chefs use Carnaroli rice most often.
As mentioned above, it contains more starch than other types of grains in this same classification. It will hold liquid and retain its shape better than arborio rice, which means in the end, you will get a better dish!
