Walnut Chocolate Chip Banana Bread
SERVING SIZE: Makes about 12 slices
OVEN: Preheat to 350°F
INGREDIENTS:

1 cup granulated sugar -
1/2 cup of unsalted softened butter -
2 beaten eggs -
4 very ripe bananas - 1 1/2 cups of All Purpose flour

1/2 teaspoon salt -
1 teaspoon of baking soda -
1 teaspoon vanilla extract -
1 cup semi-sweet chocolate chips - 1 cup of chopped walnuts
HOW TO:

Preheat your oven to 350°F
- Mix together both sugars, melted butter, salt, egg and vanilla until a smooth paste is formed
- In your electric mixer at medium speed cream together the butter and sugar until it's light and fluffy
- Add the bananas and eggs and let them incorporate

Add the flour, baking soda, salt and vanilla extract on low speed, so the flour doesn't go everywhere and combine

In a separate bowl dust the chocolate chips and walnuts with some flour and then add to the bowl folding them in
- Pour the batter in a greased loaf pan lined with some parchment paper hanging out of the sides for easy extraction
- For decoration you can slice some bananas lengthwise and sprinkle some walnuts placing them on the top of the batter where they will bake in as a nice decoration
- Bake for 55 minutes making sure it doesn't brown too much at the top (if it does cover loosely with tin foil)
- Test with a toothpick until it's done (there shouldn't be raw batter on the toothpick but it might still be moist or have some melted chocolate on it)
- Remove from the oven and gently take out of the pan to cool completely (this is where the overhanging parchment paper helps to de-pan)
